Moi MoiIf you move around through the countries of Camerouns, Nigeria, Benin, Togo or Ghana, you will sooner or later encounter what is called in southeastern Nigeria "Moi Moi" (pronounced moy-moy) - for sale often in bus and taxi parks, markets, at street stalls and, if you are lucky, fresh and hot from a tray on the head of a young boy or girl. Moi moi are steamed beancakes - very delicious. They are made from black-eyed beans according to the recipe below. Traditionally, in the villages of southeastern Nigeria, moi-moi are steamed in banana leaves. But you will often find them for sale steamed in small tinned milk cans (African recycling!) or even smaller used tomato paste tins. Sometimes an egg or a piece of cooked fish is added to the top of the bean paste before steaming.Moi Moi Recipe
